Freeze-Ahead Red Lentil Soup
One pot, eight portions, and it reheats from frozen in the microwave in four minutes.

This is the soup I made in batches at 36 weeks and lived on for the first month. It's cheap, it's filling, and it goes from freezer to bowl in four minutes, which is about how long a newborn nap lasts some days.
Method
Soften
Warm the oil in a large pot. Add onion and carrot and cook for 6–8 minutes until soft. Add garlic and cumin for 1 minute more.
Simmer
Stir in the lentils, tomatoes and stock. Bring to a boil, then simmer for 20 minutes until the lentils fall apart.
Blend
Blend until smooth, or leave it chunky. Stir in lemon juice and season. Save a portion before salting for little ones if needed.
Freeze
Cool completely. Ladle 1½ cups into each freezer bag, press out the air and freeze flat. They stack like books.
